I'm calling these Audrey's Cinnamon Rolls because I took different recipes that i've found and taken what I like best about each one and put them together. I have a right to do that now don't I? Hopefully they work out as good for you as they did for me.
By the way I use Emily Morise Bread recipe for the dough. I take half the dough and turn it into 9 rolls, then with the other half I turn into Cinnamon rolls. But you could make all the dough into one or the other. Oh and a little side note. The brand of flour you use makes a big difference in how they taste. I like Lehi Roller Mills flour. The cheap stuff at walmart, albersons, or macey's not so good.
Audrey's Cinnamon Rolls
2 cups warm water
2/3 cups white sugar
1 1/2 tablespoons yeast
Mix the water and sugar together until the sugar dissolves, add yeast and let it set until yeast turns to a creamy foam. About 5-10 min
1 1/2 teaspoons salt
1/4 cup vegetable oil
6 cups flour
Add salt and vegetable oil. Mix in 1 cup of flour at a time and knead until it is all mixed together. Sometimes I use 1/2 cup more flour, depending on the dough.
Put dough in bowl and cover with warm damp cloth and let it rise for 1 hour.
Filling:
1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened
Cut dough in half and roll into a 16x21 inch rectangle. Doesn't have to be perfect. Spread the 1/3 cup butter all over dough all the way to the edges. Then sprinkle the brown sugar/cinnamon mixture all over, to the edges. Kinda pat it down into the butter. Roll up dough from the longest side. When you get towards the end brush the edge with some water so the roll won't unroll. Get a piece and string and cut the roll in half. Keep doing that with each half, until you get the size of roll you want. I usually do 1 inch in width. Place them in a 9x13 pan, with only a 1/4 inch between them. Let them rise until they double in size. Bake at 400 for 15 min.
Frosting:
4 oz cream cheese, softened
1/4 cup butter, softened
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt
Mix this all together and spread over rolls.

those sound amazing! So, what kind of flour should I use if I don't live in Utah? Good question, huh.
